It is a hand-made junmai (sake made without added sugar or alcohol) daiginjo that uses 100% Yamadanishiki. Founded in 1677, the name Genbei was passed down from generation to generation, and the traditional methods were protected. It uses the famous water of Shiragikusui (Shiragiku water). It is a dry junmai daiginjoshu that is highly scented with the deep taste of the daiginjo. By polishing the Yamadanishiki to 35%, the dry junmai daiginjoshu has a taste of spreading in the mouth and refreshing aftertaste that has been created with the utmost care by the brewery.
