In the bitter cold of winter, the original rice from Yamagata Prefecture suitable for sake brewing, the "Dewa San San," is highly polished and brewed slowly and carefully at low temperatures using just the core of the rice. After squeezing the rice, processing such as burning is done promptly, and stored for maturation in ice-cold temperatures so it does not lose its flavor. It has an extreme taste creating a harmony between the delicate and gentle scent of the ginjo and a mellow flavor.
