The Tateshinapple/Cider is a high grade cider which uses the juice of Sun Fuji ripe apples from Tateshina, Shinshu, a place famous for production of apples. It does not use condensed fruit juice of apples, and the antioxidants are additive-free.
The fluffy scent of apples and richness of the juice once it enters the mouth are its appeal.
The Premium Cider Twin Set is a set that consists of Original (bitter sweet) and Sec (dry), and its alcohol content is 7% to 8%.
                                                                          
● It uses the breed Sun Fuji which was specially selected for the cider.
Ripe apples with sugar content above 18 degrees are specially selected. Because most of the sugar content is alcoholized (1/2 of the sugar content is the alcohol percentage, and at 18 degrees, the alcohol percentage is approximately 8% for the sweet flavor and 9% for the dry). There is no sugar added to our cider. We produce a fruity and rich cider just with the sweetness of the apple.
● No-bag apples are used.
The Tateshina apples, which have received a lot of sunlight, may look bad in terms of appearance and shape, but they are rich in honey. The apple is heavy and its sugar content is higher than 17 degrees. The people of Tateshina saw that birds were flocking to the un-bagged apples, and when they actually gave the apple a try, they were surprised by the unprecedented taste. Since then they stopped promoting bagged apples and started the un-bagged apples.
● Authentic secondary bottle fermentation method
A secondary bottle fermentation method used in Normandy, France that is still used today is used.
The high grade ripe apple is shipped after the processes of cleaning, crushing, insertion of yeast, primary fermentation, racking, formulation, bottling, secondary fermentation, and aging. There is no process of disgorging, the removal of lees.
Only the lees that have gone through primary fermentation are precipitated. It is an excellent method that allows for the original mellow scent of the apple and refreshing sensation as it goes down the throat can be experienced. High grade champagne also uses this method.
● Additive-free
Concentrated juice, sulfite (antioxidant), chaptalization, acidification, or carbonate filings are not used or performed.

It is an authentic cider made by using a traditional French method of bottle fermentation (champagne method), and the lees at the bottom of the bottle prove its authenticity.

「たてしなップル・シードル」は、りんごの名産地である信州立科町の完熟りんご「サンふじ」の果汁を使った高級シードルです。りんごの濃縮還元果汁を一切使わず、酸化防止剤も無添加です。
ふんわりとしたりんごの香りと、口に含めば広がる果実味の豊かさが魅力的です。
プレミアムシードル ツインセットは、オリジナル(微甘)とセック(ドライ)の各1本セットで、アルコール度数は7〜8%です。
                                 
●シードル用に特別撰果した品種「サンふじ」を使用しています。
糖度18度超の完熟りんごの撰果。糖度のほとんどをアルコール化するため(糖度の1/2がアルコール度数、18度でアルコール度約8%甘口・約9%ドライ)。弊社シードルは、補糖をせずにりんごの甘さだけでフルーティーで芳醇なシードルを醸し出します。
●無袋りんごを使用しています。
太陽の光をさんさんと浴びた立科のりんごは、姿や形は悪いかもしれませんが蜜はたっぷり。りんごは重く、糖度は17度以上。立科町の住人が袋のついていないりんごに鳥が群がり、ついばんでいる様子を見て実際に自分で食べてみたところ、今までにない美味しさに驚き、有袋りんごをやめて無袋りんごを推奨するようになりました。
●本格ビン内二次醗酵方式
フランスのノルマンディー地方で今でも伝統的に造られている瓶内二次発酵方式を採用しています。
高級完熟りんごを洗浄、破砕、イースト投入、一次発酵、澱引き、調合、瓶詰、二次発酵、熟成後、出荷となります。デゴジュルマンという澱を除くことは行いません。
一次発酵させた澱のみを沈殿させ作業を行います。本来の芳醇なりんご香や爽やかな喉越しを体感することができる、優れた製法です。高級シャンパンもこの製法をとっています。
●無添加です
濃縮還元果汁や亜硫酸塩(酸化防止剤)、補糖、補酸、炭酸充填など、一切使用しておりません。

フランスの伝統的な製法であるビン内発酵(シャンパン製法)によって作られた本格シードルで、ビン底に澱があるのが本物の証です。
